Lactase is an enzyme that is synthesized in the brush border of the small intestine and has the important job of digesting lactose, the sugar found in mammalian milk. Given that breast milk is weaned in infancy, humans have not evolved to continue synthesizing lactase in adulthood to a large degree, as it is expected that milk intake of any kind will be minimal, be it cow, camel or goat.
This is one of the reasons that lactose intolerance is so prevalent in developed nations that tend to consume dairy products as a regular part of the diet.
